The Everest Shiraz 2008 – Museum Release

RRP: $450.00

Dense ruby colour, with an intense, enticing nose of rich, red berry fruits and subtle French oak. The wine is incredibly dense and focussed with a richness and purity that simply exudes top-class Barossa Shiraz. Rich dark chocolate, mocha and cedar spice are all to the fore but the central core is highly focussed.
Supple tannins from the gentle press merely complement the fruit, silky and rich yet impressively interwoven into the wine.
The fruit/ acid balance ensures excellent length and provides a purity of structure for long term ageing.

Fermented in open fermenters over 9 day period, daily hand plunging & pump-overs. Only the highest quality, drainings run off to complete MLF in oak and then matured for 24 months in French oak, matured on lees to maintain structure and fruit profile.

This is about as rich and opulent as Barossa Shiraz gets. It is well- made and displays pinpoint fruit ripeness. Mocha, dark chocolate, toasted-barrel aromas; dark plum and blackberry, too. Thick, dense and ultra-concentrated. APRIL/MAY 201196 POINTS

Only two new French puncheons (less than 90 dozen bottles) are made of this wine; the bouquet immediately attests to its quality, with fragrant black fruits and integrated oak, the medium- to full-bodied palate imperious in its power and drive, savoury nuances within the heart of the deep fruit flavours adding to the length of the palate.

Superb follow-up to the ’05 Everest that was voted the world’s best shiraz at last year’s International Wine and Spirit Competition. To be released next month this new vintage is hand picked, basket pressed, opulent and very, very classy. Robust and brooding, layers of red and black fruit, a core of pepper and spice, balance and poise, lovely oak and supple tannins.

Classy and stylish, with spicy/leafy pine needle like bouquet and a long, creamy palate with fine definition of ripe berry fruit flavours nicely blended with oak. World’s Greatest Shiraz Challenge VI, JULY 2011

Brown spice and sugar, red berries, liquorice, cedar and vanilla. Big and ripe, firm tannin, plenty of depth and savoury toasty wood on the finish. Primal but pretty good. In balance in a stentorian way. Rosy oak an attractive garnish. Time please. March 2012

Deep rich red to rim. Wow! Cherry pie leads the way to an intense fruity/spicy nose, redolent with cassis, plum and cocoa, star anise and pepper. Lovely concentration in the mouth, full of fruity sweetness and spicy overtones. Gracious cashmere tannins uphold the structure. The finish is firm, with excellent concentration and length and will keep travelling for future reward.
